Celery Soup

This elegant celery soup is a masterclass in turning humble ingredients into a sophisticated dish. By gently sweating the celery with waxy potatoes and onions in plenty of butter, you create a deep, savoury base that perfectly balances the bright, aniseed notes of fresh dill. It is a light yet indulgent soup that showcases the versatility of seasonal greens, resulting in a vibrant colour and a remarkably smooth, velvety texture.

Ideal for a quick weekday lunch or a refined first course for a dinner party, this vegetarian-style soup is finished with a touch of double cream for a luxurious mouthfeel. Serve it alongside warm crusty bread, and do not forget the final flourish of celery leaves and high-quality olive oil to lift the earthy flavours.
