These flat beans with mustard thyme vinaigrette offer a sophisticated yet simple way to enjoy seasonal produce. By pairing the natural, earthy sweetness of Romano beans with a punchy, herb-flecked dressing, you create a side dish that feels both elegant and restorative. The use of Dijon mustard provides a gentle heat that cuts through the richness of the extra virgin olive oil, while fresh thyme adds a fragrant, woody finish to every bite.
This versatile vegan dish is an excellent accompaniment to roasted root vegetables or a hearty grain salad. Because these beans are equally delicious served warm from the pan or at room temperature, they are a practical choice for entertaining or weekend meal prep. High in fibre and packed with vitamins, it is a healthy, vibrant addition to any plant-based menu.
