- 1 pound chicken breasts, boneless & skinless cut into chunks - 25g old fashioned oats (also known as 5 minute oats) - 0.25 teaspoons dried parsley - 0.5 teaspoons garlic powder - 0.25 teaspoons onion powder - 0.5 teaspoons kosher salt - 90g panko bread crumbs - 1 tablespoon parmesan cheese, grated
## How to make Easy chicken nuggets
1. Preheat the oven to 190°C and line a large baking tray with foil. 2. Place a wire cooling rack over the prepared baking tray to ensure the nuggets crisp up on all sides. 3. Add the chicken breast chunks, oats, parsley, garlic powder, onion powder and salt to a food processor. 4. Pulse the mixture until the chicken is finely chopped and the ingredients are thoroughly combined. 5. Combine the panko breadcrumbs and grated parmesan in a shallow bowl or on a plate and stir well. 6. Roll approximately one tablespoon of the chicken mixture between moistened palms and flatten into a nugget shape. 7. Press each nugget gently into the breadcrumb mixture until evenly coated on both sides. 8. Arrange the nuggets on the wire rack and lightly coat with a little cooking spray. 9. Bake for 15 minutes or until the chicken is cooked through and the coating is firm. 10. Transfer to a hot grill for 2 minutes if you prefer an extra golden-brown finish. 11. Serve immediately or allow to cool completely before freezing in airtight bags for up to 3 months.
