These tomato, basil, avocado and feta stacks are a vibrant celebration of fresh, seasonal produce. This vegetarian dish reimagines the classic Caprese salad by introducing creamy avocado and tangy feta for a more robust flavour profile. The combination of juicy heirloom tomatoes and peppery fresh basil creates a beautiful contrast in textures, while a simple dressing of extra-virgin olive oil and balsamic vinegar ties the elements together perfectly.
Ideal as an elegant starter for a summer dinner party or a light, nutritious lunch, these stacks are both visually impressive and incredibly easy to assemble. By using ripe avocados and the best quality tomatoes you can find, you ensure a restaurant-quality finish. Serve them with a side of crusty sourdough bread to soak up the delicious juices and healthy fats.
