This vibrant vegetarian dish combines the richness of soft-boiled jammy eggs with the salty tang of crumbled feta for a truly satisfying brunch. By gently tearing the eggs rather than chopping them, you maintain those beautiful golden yolks that create a natural sauce when paired with lemon juice and extra-virgin olive oil. It is a simple yet sophisticated way to elevate a quick midweek lunch or a relaxed weekend breakfast.
Refreshing tender herbs like tarragon and chives add a fragrant lift to the savoury base, making these flatbreads feel wonderfully seasonal. Whether you serve the mixture over warm shop-bought flatbreads or thick slices of sourdough toast, this recipe is packed with protein and healthy fats. It is a nutritious, homemade meal that proves minimal ingredients can deliver maximum flavour in under fifteen minutes.
