There is a profound difference between shop-bought wraps and the toasted, earthy aroma of fresh corn tortillas made from scratch. This essential vegan staple relies on masa harina—a specially treated corn flour—to create a soft, flexible base for your favourite Mexican fillings. Whether you are hosting a taco night or looking for a naturally gluten-free bread alternative, these homemade rounds offer a superior texture and a rich, nutty flavour that simply cannot be replicated by pre-packaged versions.
Crafting the perfect dough is a tactile process that takes only a few minutes once you find the right balance of hydration. Once pressed and scorched in a hot frying pan, these tortillas become the ultimate vessel for spicy beans, roasted vegetables, or zesty salsas. For the best results, keep them nestled in a warm tea towel as you cook the batch to ensure they stay soft, supple, and ready for folding.
Ingredients for Fresh Corn Tortillas
475ml (or more) masa (corn tortilla mix
preferably Maseca brand)
1/2 cucchiaini di sale kosher
Olio vegetale (per spennellare)
How to make Fresh Corn Tortillas
Whisk masa and salt in a medium bowl. Stir in 350ml water; knead in bowl until dough forms. The dough should feel firm and springy and look slightly dry (think Play-Doh). Add more water by tablespoonfuls if too crumbly; add a little more masa if too wet.
Measure 1 heaping tablespoon dough and roll into a ball. Flatten on a tortilla press lined with a plastic bag. If tortilla crumbles, dough is too dry (add more water); if it sticks to the plastic, dough is too wet (add more masa). Repeat, pressing out 2 more tortillas.
Heat a large cast-iron skillet over medium-high heat; lightly brush with oil. Cook 2-3 tortillas until charred in spots and edges start to curl, 1-2 minutes. Turn; cook through, about 15 seconds. Transfer to a kitchen towel; fold over to keep warm. Repeat, in batches, with remaining dough.
