Grilled Prawns with Turmeric Mojo Sauce

This vibrant high-protein dish features succulent grilled prawns bathed in a zesty turmeric mojo sauce. Inspired by bright Caribbean and Latin flavours, the marinade combines fresh citrus juices with the warmth of ginger and the subtle heat of habanero chillies. The turmeric adds a beautiful golden hue and earthy depth, making this a visually stunning meal that is as nutritious as it is delicious.

Ideal for a quick weeknight dinner or an impressive weekend lunch, these prawns cook in mere minutes on the grill or a hot griddle pan. The punchy sauce doubles as both a marinade and a fresh dressing, ensuring every bite is packed with flavour. Serve them alongside a portion of fluffy short-grain rice to soak up the aromatic juices for a satisfying, healthy homemade feast.

Ingredients for Grilled Prawns with Turmeric Mojo Sauce

  • 6 garlic cloves, smashed

  • 2 habanero chillies, seeds removed, chopped

  • 1 (3") piece ginger, peeled, thinly sliced

  • 80ml fresh lime juice

  • 80ml fresh orange juice

  • 1 tablespoon sugar

  • 2 teaspoons unseasoned rice vinegar

  • 1/2 teaspoons ground turmeric

  • 80ml vegetable oil, plus more for grill

  • Kosher salt

  • 675g large prawns, peeled, deveined

  • Cooked short-grain white rice (for serving

  • optional)

  • Flaky sea salt

Prepare a grill for medium-high heat. Pulse garlic, chillies, ginger, lime juice, orange juice, sugar, vinegar, and turmeric in a food processor until combined and almost smooth. With the motor running, gradually stream in 80ml oil and process until emulsified.

Pour half of the sauce into a small bowl; season with kosher salt. Set aside for serving. Transfer remaining sauce to a medium bowl and add prawns. Season with kosher salt and toss to coat.

Clean and oil grate, then immediately arrange prawns on grill. Grill until bright pink and lightly charred, about 1 minute per side. Divide prawns among bowls. Spoon reserved sauce over; sprinkle with sea salt. Serve with rice if desired.
