By soaking the fennel, radishes and colourful carrots in a light brine, the vegetables become exceptionally crisp and refreshing. It is a wonderful way to showcase seasonal produce, offering a vibrant mix of textures that range from the peppery crunch of radish to the delicate bitterness of Belgian chicory.

Served with a tangy, herb-flecked remoulade, this dish is perfect for light summer entertaining or as a healthy appetiser for a dinner party.
