Steak and Eggs Rancheros

This high-protein steak and eggs rancheros is a sophisticated and nutritious twist on the traditional Mexican breakfast. By swapping fried beans for earthy lentils and using lean flank steak, this dish provides a sustained energy boost that keeps you full until lunchtime. The combination of succulent beef, spicy salsa, and creamy melted cheese creates a wonderful depth of flavour, while the soft whole-grain tortillas add a satisfying texture to every bite.

Ideal for a hearty weekend brunch or a post-workout recovery meal, this recipe balances macronutrients without compromising on taste. Serving the eggs sunny-side up allows the rich yolk to create a natural sauce that ties the steak and lentils together beautifully. It is a quick yet impressive meal that brings a touch of restaurant-quality cooking to your own kitchen table.
