Sicilian Turkey Burger

These Sicilian turkey burgers offer a vibrant, Mediterranean-inspired twist on a classic high-protein meal. By incorporating salty capers, sweet currants and aromatic fennel seeds directly into the lean turkey mince, every bite is packed with sophisticated savoury flavours. Using tomato purée ensures the patties remain moist and tender, while a melted Parmesan topping provides a rich, golden finish that elevates this dish far beyond standard fast food.

Perfect for a nutritious midweek dinner or an easy weekend treat, this recipe replaces heavy beef with lighter poultry without sacrificing depth of flavour. Serve these burgers in toasted ciabatta rolls with a drizzle of balsamic vinegar and a fresh green salad for a balanced, satisfying meal that is both healthy and filling.

Ingredients for Sicilian Turkey Burger

  • 450g lean turkey mince

  • 45ml tomato paste

  • 45ml currants

  • 2 tablespoons capers

  • 1/2 teaspoons dried basil

  • 1/2 teaspoons crushed fennel seeds

  • 1/2 teaspoons salt

  • Vegetable oil cooking spray

  • 120ml grated Parmesan

  • 4 ciabatta rolls, split

  • 4 teaspoons balsamic vinegar

  • Sliced tomato (optional)

In a bowl, mix turkey, tomato paste, currants, capers, basil, fennel seeds and salt. Form turkey mixture into four 3/4-inch-thick patties. Coat a grill rack or grill pan with cooking spray. Cook until internal temperature reaches 74°C, about 2 minutes. Brush bottom of each roll with 1 teaspoon vinegar; top with 1 burger, tomato, if desired, and other half of roll.
