This high-protein dish offers a healthier, oven-baked take on a classic family favourite. By using crushed cornflakes for the coating, these chicken tenders achieve a superior crunch that rivals traditional deep-frying. Infused with a blend of dried herbs and garlic, each piece provides a satisfying savoury flavour that pairs perfectly with a cooling dip.
Ideal for a quick midweek dinner or a nutritious lunch, this homemade version is far lighter than shop-bought alternatives. The use of a wire rack allows the hot air to circulate, ensuring the base stays crisp and golden. Serve these tenders alongside a fresh green salad or some roasted vegetables for a balanced, protein-packed meal that both children and adults will enjoy.

How to make Cornflake-Crusted Chicken Tenders
Back to contentsPreheat oven to 204°C. Cover a baking sheet with aluminum foil and set a heatproof wire baking rack on top; spray rack lightly with cooking spray.
In a small bowl or shallow dish, season flour with 1/4 teaspoons each salt and pepper; whisk eggs in another shallow dish. In a third shallow dish, mix cornflakes with parsley, garlic, dill, the remaining 1/2 teaspoons salt, and the remaining 1/4 teaspoons of pepper.
Dredge chicken in flour to coat, shaking off excess. Dip into egg and then into cornflake mixture, making sure entire surface is coated. Arrange on prepared baking rack.
Bake for 12 to 15 minutes, or until golden brown and cooked through, flipping once during cooking. Serve with Buttermilk Ranch Sauce for dipping.
